Baking has always been one of my passions, which has, incidentally, caught on with my daughter also! So, when I decided that making sugar free desserts is my life's calling, cakes were one of my most natural choices! After a lot of research, I discovered that Almond flour was the right fit for making gluten-free, low-carb, protein-rich cakes - add to this my funda of 'No sugar, No artificial sweeteners, No preservatives, No anything artificial' - and the Almond Flour cakes were born! Taking one more step ahead, we threw in some low-carb, fibre-rich, antioxidant-rich berries - cranberries, strawberries, goji berries, blueberries, blackberries, raspberries, a whole lot of them! - and what we got was this amazing Almond Flour Berry Cake! We arrived at the right recipe to make it soft and spongy - I am sure you will enjoy eating it, as much as I enjoyed making it!
